The term stainless steel 420 refers to a small group of the steel alloys with similar chemical compositions, grouped together based on the judgement of SAE International,or the Society of Automotive Engineers. Grade 420 stainless steels are high carbon steelswith,at minimum,a 12% chromium content.420 Stainless Steel Manufacturers Suppliers IQS Directory
420 stainless steel is a hardenable, martensitic stainless steel with corrosion resistance similar to Type 410. It has a higher carbon content to increase strength and hardness over Type 410. Maximum corrosion resistance only in the fully hardened condition or fully hardened and stress relieved condition. Never used in the annealed condition.

Sorry, they are not even close. 18/10is a non-magnetic stainlesssteelwith 10 percent nickel in it. 420is a cheaper,nickel-free,magnetic stainlesssteel. The 18/10is significantly more "stain less". In general, I would be hesitant to switch the grade of stainless steel used. You are asking to switch from a more unique grade to a common grade.
